Not that Delia.

A friend of mine — who knows about this — suggested this the other day as a quick and easy supper that’s super tasty. I think she was making it that evening, but I only decided to make it this evening when I realised I didn’t fancy cooking anything that required too much effort!

  • One red pepper
  • Four large cloves of garlic
  • One tomato
  • Some anchovies (the oily salty kind out of a jar)
  • Fresh chopped coriander

Prepare your oven by switching it to “on”.

Cut the olive in half and remove the seeds and white fleshy bits. Place open-side up in a roasting dish, then chop the garlic into large pieces and place into the pepper. Cut the tomato in half and place inside the pepper.

Place a couple of anchovies over the tomato, pour some oil over the ensemble and add pepper. If you don’t eat/like anchovies, find a salty alternative!

Roast in the oven until the pepper starts to caramelise. Remove from the oven, sprinkle with coriander and serve with quinoa.
