I didn’t really have the inspiration to cook, so this was acceptable food requiring the minimum of effort.

  • 1 medium onion
  • 1 large clove of garlic
  • One courgette
  • 100g mushrooms
  • Butter
  • Crème fraîche
  • Parmesan cheese

Cut the courgette lengthwise, twice, then slice finely. Slice the mushrooms.

Warm the butter in a frying pan then add the garlic and onion and allow them to fry gently. When the onions are starting to soften, add the sliced mushrooms and courgette and cook gently, adding more butter if necessary.

When the vegetables are cooked, add a tablespoon of crème fraîche and a good shaking of Parmesan to make a sauce.

Serve with pasta; I used spaghetti.
