Following the stew disaster, when I got home from work I had to improvise something quick using what was left in the fridge; spinach and mushrooms, two of my favourite things, and a tub of crème fraîche.

Fry some onions and garlic in butter, then add the mushrooms and fry them gently until they’re nearly cooked. Meanwhile, rinse the spinach to wash it then add it to the pan and leave to wilt, covered, for a few minutes.

When this has happened, season the contents of the frying pan and add a few tablespoons of crème fraîche and stir to make a sauce. Leave this to cook through and reduce if necessary while you prepare the pasta.

Serve with parmesan, follow with a rum baba.
