In the fridge, I found some mushrooms (about 70g) which needed using, as well as the goat log from yesterday. There was a solitary tomato that I was happy to use up.

  • 70g mushrooms, halved
  • Two cloves garlic
  • Remains of a half-used onion
  • A few slices of goat log

Cut off as much baguette as you need then slice it lengthwise. Soften the onions and garlic in butter then add the mushrooms and fry until they are nearly cooked. Toast the baguette. Chop the tomato and add it to the pan, then continue to fry over a medium heat until it has given up its juices.

Butter the toast then place some goat log slices on the toast. Spoon the mushrooms and tomatoes on top. Season.

It was nice, but it could’ve been better with the addition of something tangy and/or spicy to make it slightly more interesting. I’d have liked some parsley too.
