I was aiming to make a big bowl of something that would keep in the fridge for a couple of days as it is so hot here at the moment that it doesn’t make sense to do anything that requires too much heat. I was annoyed that the gas bottle ran out just as the water was boiling for the quinoa, but the potatoes and green beans cooked successfully so all was not lost.

  • 200g new potatoes
  • remains of green beans
  • half a small onion, finely chopped
  • half a red chilli, finely chopped
  • one clove garlic, finely chopped
  • one 150g tin of tuna
  • one 240g jar of sweetcorn
  • “some” black olives

Cook the potatoes and green beans and allow them to cool. Slice the potatoes. Mix the other ingredients in a large bowl with room for 100g quinoa later in the day. I was going to add some tomatoes but decided they were best left intact until the quinoa is done. If you like anchovies, add at will.

It was tasty, if incomplete. Finish with a bowl of cornflakes and a peach from the tree.
