I went shopping this afternoon and picked up a few bits and pieces. There was a half-used jar of tomato sauce left in the fridge from my trip to Montpellier so I needed to use that up.

There was no list, which was a bit stupid, so ended up buying:

  • 115g green beans (0,95€)
  • 85g mushrooms (0,94€)
  • 150g cornflakes (0,69€)
  • 65g black olives (0,47€)
  • 2x125g tofu (2,16€)
  • two large tomatoes (0,99€)

This dish wasn’t quite sure what it wanted to be when I started it, but it turned out quite nice. I like tofu as its own thing from time to time and the only thing I know to do with it is to make it a nice colour and give it some flavour.

You need:

  • one small onion, chopped
  • five medium cloves of garlic
  • 60g green beans
  • 85g mushrooms
  • one small red (decorative) chilli pepper
  • 125g tofu, cut into medium-sized strips
  • five black olives, sliced
  • cumin
  • paprika
  • chilli powder
  • half a 200g jar of tomato sauce (with vegetables)

Soften the onions and garlic in some olive oil then add a sprinkling of the spices to your taste. Add the green beans and allow to cook a little over a medium heat. Add the mushrooms, stir and allow them to cook a little. Add the olives and chilli, turn up the heat and add the tofu. Stir this for a bit and coat the tofu and vegetables with the oil so they get a nice colour. Add the tomato sauce, stir and leave to simmer over a low heat.

I served this with rice.
