There’s been a tin of sardines looking at me from the cupboard for a while now. Saturday’s baguette needed finishing and I haven’t done yesterday’s washing up yet, so opted for something simple. I wasn’t even sure I was hungry, to be honest, but was once I’d started.

I split the sardines and remove the spines first because ick. Other people I know don’t and quite happily eat everything, but they’re just odd.

Cut the baguette lengthwise to make it easier to toast. Mix the sardines with two teaspoons of mayonnaise and some capers, butter the toast and put the mixture on top.

Pot unchanged.
